Ice cream is a frozen confection often eaten as a snack or dessert. Ice cream is made from diary and non dairy ingredients. The dairy products includes milk, milk powder, butter oil, cream etc. whereas non dairy products includes sugar, stabilizers, flavours like vanilla, strawberry, chocolate, pineapple etc, colours, fruits and nuts etc. Stabilizers, such as plant derivatives, are normally used in small amounts to prevent the formation of large ice crystals and to make a smoother ice cream. Emulsifiers, such as lecithin and mono- and diglycerides, are also used in small amounts. Different varieties of ice creams are available in the market catering to the varied tastes of the consumers. The nutrient component of the ice cream depends on the type as well as the ingredients that are used in the manufacture of the product. Ice creams are a good source of vitamin A, thiamine, niacin and vitamin E. Fruit ice creams are excellent source of vitamin C. Ice cream is one of the popular dairy food item liked by all age group of people. Ice cream can also be used as a topping for fruit salads and fruit pies.
