Coconut oil is extracted from dried coconut also known as copra and has been used for centuries. The standard end product made from copra is RBD coconut oil. RBD stands for refined, bleached, and deodorized. Virgin coconut oil can only be achieved by using fresh coconut meat also called non-copra. Chemicals and high heating are not used in further refining, since the natural, pure coconut oil is very stable with a shelf life of several years. One of the main differences between virgin coconut oil and refined coconut oils is the scent and taste. All virgin coconut oils retain the fresh scent and taste of coconuts, whereas the copra-based refined coconut oils have a bland taste due to the refining process. Coconut oil consists around 90% of saturated fat and 50% of lauric acid. Lauric acid is a medium chain fatty acid and has many of health benefits. Coconut oil plays a significant role in having a well balanced and nutritional diet. All types of food cannot be cooked in coconut oil because this oil has a special cooking property that makes baking and frying the best option, apart from other cooking methods.
