Mustard oil is extracted from black and white mustard seeds. Black mustard oil has a spicy odor and a pungent taste. White mustard oil has a bitingly pungent taste due to the allyl mustard oil it contains. Mustard oil is composed mostly of the fatty acids, oleic acid, and linoleic acid. Mustard oil contains vitamin E and natural anti oxidants. It contains high amount of mono-unsaturated fatty acids and a good ratio of polyunsaturated fatty acids, which is good for heart. Mustard oil also contains the least amount of saturated fatty acids hence it is used as cooking oil. It is a popular addition to salad dressings, stir fry recipes and marinades for meat and fish. Mustard oil is widely used in the preparation of pickles, chutneys and for frying savoury dishes.
