Sesame oil also referred to as gingelly oil or til oil is derived from sesame seeds by pressing and is well known for its characteristic taste and flavor. There are two varieties of sesame oil, cold-pressed sesame oil is light yellow, has a mild flavor and is odorless. Hot-pressed sesame oil is darker and has a more pungent taste. Sesame oil is more stable than most vegetable oil due to antioxidants in the oil. It has very high boiling point making it less prone to its break down into harmful constituents upon frying. It is also preferred because it does not turn rancid due to the presence of sesamol and sesamin-the two naturally occurring preservatives inherent in the oil. Sesame oil is a good source of vitamin E it also contains magnesium, copper, calcium, iron, zinc and vitamin B6. Sesame oil can be used in place of other edible oils for cooking.
